BIG KID ALCOHOL POPS!

This has got to be the greatest idea for adult beverages since alcohol it'self!  Kids aren't the only people who sit pool side or have summer parties. Your guests will be totally impressed with this Popsicle treat.

You can make your own Popsicles ... they are a snap to make, all you need are some Popsicle holders and a few of your favorite recipes! If you don't want to go to the trouble of making them, the stores offer a variety of gourmet Popsicles in the form of Italian ices and sorbets. These would be non alcoholic of course.

I am giving you a recipe for Mojito popsicles because hey, they are my favorite, but they will give you a sort of guideline in case you want to make substitutions to suit your fancy. Make them in all flavors ... and don't forget to add the booze!

HAVANA MOJITO POPSICLES


Yields: 6 Popsicles
Prep: 15 minutes
Freeze: 8 hours

2 oz.            Bacardi Light Rum           
3 oz.            Fresh Lime Juice                       
3 oz.            Simple Syrup*   (recipe below)            
2½ cups       Sprite, Sierra mist, OR ASTI SPUMANTE!             
12                Fresh mint leaves                         
3 cups          Ice Cubes                         

Combine all ingredients into blender with ice.  Puree all ingredients until mixture is smooth and slushy.  Pour slushy mixture into Popsicle molds.  Add Popsicle sticks and freeze for 8 hours.


*Simple Syrup

Yields: ½ cup
Prep: 10 minutes
½ cup        Sugar of choice                  
½ cup        Water                          
Bring water to a boil and remove from heat.  Add sugar and whisk mixture until all sugar has dissolved.  Mixture should be clear in color.  Bring to room temperature.

Now, when you are ready for your frozen popsicle, simply fill a wine glass half full with sparkling champagne such as Asti Spumante and drop the popsicle into the glass. The popsicle will melt into the Asti and give it an even better flavor.

***Don't be afraid to experiment around with different flavored popsicles and types of alcohol ... yum!

*** TIP:  Any alcoholic drink you can make in a glass can be frozen into a popsicle mold. Follow the amount of alcohol in the above recipe for 6 popsicles to make sure that they freeze well. Too much alcohol and they won't freeze properly.
