EASY HARVEST APPLE FRITTERS

With the apple season upon us I couldn't help thinking that we need to start dragging out the apple recipes. I had one come to mind that is absolutely delicious and easy to make. Round up the kids on a Saturday morning and spend some quality time making these wonderful apple fritters!

Ingredients

1 cup flour
1 1/2 teaspoons baking powder
3 tablespoons sugar
1/4 teaspoon salt
1 egg ( beaten)
1/3 cup milk
1 cup apple ( diced)
1 cup cooking oil

1/4 cup whole milk
1 teaspoon vanilla extract
2 cups confectioners' sugar

Directions

  1. Measure and sift all dry ingredients.
  2. Beat eggs and milk together; slowly incorporating the dry ingredients.
  3. Add the chopped apples.
  4. In a heavy skillet on the stovetop, heat cooking oil over medium-high heat.
  5. Drop teaspoon full of apple-batter into hot oil and fry until golden brown in color- 3 to 4 minutes on each side.
  6. Remove from oil and drain on brown paper.
  7. To make glaze:
  8. Combine milk and vanilla in a medium saucepan and heat over low heat until warm.
  9. Sift confectioners' sugar into milk mixture.
  10. Whisk slowly, until well combined.
  11. Remove the glaze from the heat and set over a bowl of warm water.
  12. Dip doughnuts into the glaze, 1 at a time, and set on a draining rack placed in a half sheet pan for 5 minutes before serving.
  13. Makes 12 small fritters.
