EXTREME POTATO EXPLOSION!
TATER TOT NACHOS
This is a "must have" recipe for parties and brunches. It is potatoes gone wild! Loaded tater tots with everything your family and friends absolutely crave! Make these next time you have a party or game day and see just how long they last!
Ingredients
- 1 large platter
- 1 (2 lb.) package of your favorite frozen tater tots, baked according to package directions
- 2 cups shredded lettuce
- 2 cups pulled, chopped pork or chopped bacon or mix of both
- 2 cups of rinsed and drained pinto or red beans
- 1/2 cup of sliced black olives, drained
- 1 cup diced tomato
- 1 cup corn, drained
- 1 cup chopped red onion
- 1/2 cup chopped cilantro or parsley
- 1/2 cup sliced green onion
- For sauce:
- 1 cup sour cream
- 1 cup ranch dressing
- 1 teaspoons honey
- juice and zest from one lime
- 1/4 cup chopped cilantro or parsley
- On a nice big sized platter, first place all of the already baked tater tots and spread them out.
- Next sprinkle the lettuce over the top of tater tots.
- Layer all other ingredients in the order they are listed. Top with sour cream mixture and enjoy!
- To make the sauce:
- Combine all the sauce ingredients, mix well and you will want to use this mixture at room temperature. Store any left overs in the fridge. Yield: serves 6
