EXTREME POTATO EXPLOSION!

TATER TOT NACHOS

This is a "must have" recipe for parties and brunches. It is potatoes gone wild! Loaded tater tots with everything your family and friends absolutely crave! Make these next time you have a party or game day and see just how long they last!

Ingredients

  • 1 large platter
  • 1 (2 lb.) package of your favorite frozen tater tots, baked according to package directions
  • 2 cups shredded lettuce
  • 2 cups pulled, chopped pork or chopped bacon or mix of both
  • 2 cups of rinsed and drained pinto or red beans
  • 1/2 cup of sliced black olives, drained
  • 1 cup diced tomato
  • 1 cup corn, drained
  • 1 cup chopped red onion
  • 1/2 cup chopped cilantro or parsley
  • 1/2 cup sliced green onion
  • For sauce:
  • 1 cup sour cream
  • 1 cup ranch dressing
  • 1 teaspoons honey
  • juice and zest from one lime
  • 1/4 cup chopped cilantro or parsley
  1. On a nice big sized platter, first place all of the already baked tater tots and spread them out.
  2. Next sprinkle the lettuce over the top of tater tots.
  3. Layer all other ingredients in the order they are listed. Top with sour cream mixture and enjoy!
  4. To make the sauce:
  5. Combine all the sauce ingredients, mix well and you will want to use this mixture at room temperature. Store any left overs in the fridge. Yield: serves 6
