ROTEL CUPS
If you have ever come across something so simple and so addictive you can't keep your hands off of it ... you are about to embark on another obsession with this recipe I am posting tonight. These little appetizers are totally crunchy, creamy, tasty and you just can't quit eating them. Hope you enjoy them as much as my family. My sister just made them for a birthday party. She made 60 of them .... there were six of us sharing these little morsels and I am not lying when I say they were gone in less than ten minutes! They are a snap to make and cleanup is next to nothing!
Rotel Cups
Yields: 45 cups
Ingredients

- 1 Can rotel tomatoes, drained (almost all the way)
- 1 bag bacon pieces
- 1 cup shredded swiss
- 1 cup Mayo
- 3 packages phyllo pastry cups - thawed
Directions
- Preheat oven to 350 degrees F.
- Mix the first 4 ingredients and scoop evenly into the cups. Place on baking sheet and cook at 350 for 15 min.
