STUFFED BELL PEPPER SOUP

With the weather fast approaching some of the coldest digits in years, just the idea of tasty warm soup mentally warmed me up just thinking about it. Not only is it a good body warmer ... it is nutritious and just what the doctor ordered if you are feeling a little under the weather. This is one of my favorite recipes. It is so easy to make and you will reap the benefits tenfold.
Tastes like a stuffed bell pepper - easy, tasty and filling!

 Cook time: 30 Min  Prep time: 20 Min 

Ingredients:

1lb lean ground beef
1 c green bell pepper, diced
1 c red bell pepper, diced
1 orange bell pepper, diced
1 1/2 c onion, diced
3 clove garlic, minced
2 can(s) 14.5 oz petite diced tomatoes with basil
1 can(s) 15 oz tomato sauce
2 c chicken broth
1 tsp. marjoram, dried
2 tsp. basil, dried
2 tsp. sugar
salt and pepper, to taste
3 c cooked rice

Directions:

1. In a large skillet, brown ground meat over medium heat. Drain fat. Add diced peppers, onions, and garlic. Cook about 5-10 minutes over medium-low heat.

2. Transfer ground beef mixture to a large Dutch oven or soup pot. Add diced tomatoes, tomato sauce, chicken broth, marjoram, salt and pepper. Cover and simmer on low heat for 30 minutes.

3. While soup is simmering, cook rice. Just before serving, add rice to soup and mix thoroughly.
